Extraction and Characterization of Pectin from Lemon Waste for Commercial Applications

The objective of this paper was preliminary to extract and characterization purified pectin from lemon wastes. Dry waste extracted applying citric acid solvent or water at various concentrations under a similar condition (85 ºC for 4 h). It found that the highest yield (20.8% dry basis) achieved using hot extraction with an esterification degree 47.8%. contained 63.2 ± 0.74% galacturonic acid, followed by 17.4 0.76% total sugar. monosaccharides in were arabinose (2.7 0.20%), galactose (2.3 0.01%), glucose (1.4 0.09%), mannose (0.4 fructose 0.05%), xylose (0.1 0.01%). had high atomic weight 2060 kDa wide polydispersity index 4.41, decided high-Performance Size Exclusion Chromatography (HPSEC). extricated grouped into low methoxyl pectin, depends on content affirmed Fourier transform infrared spectroscopy (FT-IR) rheological properties. In conclusion, discoveries study show can be investigated as promising elective commercial manufacturing pectin.
